Ė molto più del piatto tipico dell’isola, segnale
inconfondibile della festa, il coniglio
all’ischitana. Ė la sintesi di una storia
ultramillenaria, di usi familiari e collettivi,
dell’identità contadina dell’Isola Verde. Un
patrimonio in cui ci si riconosce come parte
della comunità, pur nelle variazioni sul tema che MENU
connotano la provenienza dalle diverse località
dell’isola e l’appartenenza familiare. Perché varie
sono le deviazioni dalla ricetta base, arricchita dal
profumo e dal gusto che solo le erbe glie del terreno
